Description
These loaded BBQ chicken stuffed sweet potatoes combine the natural sweetness of roasted sweet potatoes with juicy BBQ chicken, melted cheese, and fresh herbs for a quick, satisfying, and comforting meal.
Ingredients
- 4 medium sweet potatoes, scrubbed clean
- 2 cups cooked shredded chicken (rotisserie or grilled)
- 3/4 cup BBQ sauce (your favorite brand or homemade)
- 1 cup shredded sharp cheddar cheese (or mozzarella/pepper jack)
- 2–3 stalks green onions, thinly sliced
- 1/4 cup sour cream or Greek yogurt
- 1 teaspoon smoked paprika (optional)
- Salt and pepper, to taste
- 1 tablespoon olive oil
- Handful fresh cilantro or parsley, chopped (optional garnish)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with foil or parchment paper.
- Scrub sweet potatoes clean, prick each a few times with a fork. Rub with olive oil, sprinkle with salt, and place on the baking sheet.
- Roast sweet potatoes for 45-50 minutes until tender when pierced with a fork.
- While potatoes roast, shred cooked chicken using two forks or a mixer and place in a mixing bowl.
- Add BBQ sauce, smoked paprika, salt, and pepper to the chicken. Stir gently until well coated.
- Remove sweet potatoes from oven and let cool for a few minutes until safe to handle.
- Slice each sweet potato lengthwise and fluff the insides gently with a fork.
- Fill each potato generously with the BBQ chicken mixture, top with shredded cheddar cheese.
- Return to oven for 5-7 minutes until cheese melts and bubbles.
- Remove from oven, dollop sour cream or Greek yogurt on top, and sprinkle with sliced green onions and chopped cilantro or parsley.
- Serve warm.
Notes
Keep an eye on the cheese near the end of baking to avoid burning. For faster cooking, slice sweet potatoes in half lengthwise or microwave before roasting. Use gluten-free BBQ sauce for gluten-free version. Vegan option: substitute chicken with shredded jackfruit and cheese with dairy-free alternative.
