  • 2 tablespoons olive oil

  • 12 soft corn tortillas
  • 12 flour tortillas
  • 12 hard taco shells
  • 1 cup diced tomatoes
  • ½ cup chopped red onion
  • 2 cups shredded lettuce
  • ¼ cup chopped cilantro
  • 1 cup diced avocado or guacamole
  • ¼ cup jalapeño slices (optional)
  • 1½ cups shredded cheddar cheese
  • ½ cup crumbled queso fresco or cotija cheese
  • 1 cup fresh mango salsa or pico de gallo
  • Chipotle lime crema (½ cup sour cream mixed with 1 tablespoon minced chipotle peppers and 1 tablespoon lime juice)

Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add ground beef, breaking it up with a wooden spoon. Cook until browned, about 7-8 minutes.
  2. Drain excess fat, then stir in 2 tablespoons taco seasoning and ½ cup water. Simmer for 5 minutes until thickened. Season with salt and pepper.
  3. Toss cooked chicken with 1 tablespoon taco seasoning, 1 tablespoon olive oil, and a squeeze of lime juice. Set aside or warm gently in a slow cooker.
  4. Warm black beans in a small pot, seasoning with a pinch of cumin, salt, and pepper.
  5. Mix chipotle lime crema by combining ½ cup sour cream with 1 tablespoon finely minced chipotle peppers in adobo sauce and 1 tablespoon fresh lime juice. Adjust to taste.
  6. Dice tomatoes, chop onions, lettuce, cilantro, jalapeños, and avocado. Toss mango salsa or pico de gallo in separate bowls and keep chilled until serving.
  7. Wrap corn and flour tortillas in a clean kitchen towel and microwave in 30-second bursts until warm and pliable. Arrange hard taco shells on a platter.
