Ingredients

  • 2 tablespoons (12g) instant coffee granules
  • 2 tablespoons (24g) granulated sugar
  • 2 tablespoons (30ml) hot water
  • 1 cup (240ml) cold milk (dairy or plant-based)
  • Ice cubes (optional, for iced version)
  • Optional: cocoa powder, cinnamon, nutmeg, vanilla extract, chocolate shavings, or caramel drizzle for topping

Instructions

  1. Measure 2 tablespoons instant coffee granules, 2 tablespoons granulated sugar, and 2 tablespoons hot water.
  2. Add instant coffee, sugar, and hot water to a medium mixing bowl.
  3. Whisk immediately using an electric hand mixer on medium-high speed for 2-3 minutes, or a hand whisk for 5-8 minutes, until stiff, glossy peaks form.
  4. Check for stiff peaks: the mixture should be pale, thick, and hold its shape. If not, continue whisking.
  5. Fill a tall glass about 3/4 full with cold milk (about 1 cup) and add a handful of ice cubes if desired. For a warm version, gently heat the milk and skip the ice.
  6. Add a drop of vanilla extract to the milk if desired.
  7. Spoon the whipped dalgona coffee on top of the milk. Use a spatula to get all the whipped coffee.
  8. Optional: Dust with cocoa powder, cinnamon, or chocolate shavings.
  9. Swirl the coffee cloud into the milk with a straw or spoon, or sip through the layers.
  10. Serve immediately and enjoy!

Notes

Always use instant coffee granules for best results. Water should be just off the boil. For a sugar-free version, use monkfruit or erythritol (foam will be softer). For dairy-free, use oat, almond, or coconut milk. Whip in small batches for best texture. Serve immediately for maximum fluff.
