- 2 medium cucumbers, peeled or unpeeled and thinly sliced
- 2 cups cherry or grape tomatoes, halved
- 1/2 medium red onion, thinly sliced
- 2 tablespoons fresh parsley or basil, finely chopped
- 3 tablespoons extra virgin olive oil
- 2 tablespoons fresh lemon juice or white wine vinegar
- 1 small garlic clove, minced
- Salt and freshly ground black pepper, to taste
- Optional: crumbled feta cheese or a handful of toasted pine nuts
Instructions
- Rinse the cucumbers and tomatoes under cold water. Slice the cucumbers thinly (about 1/8 inch thickness). Halve the cherry tomatoes and thinly slice the red onion. If desired, soak onion slices in ice water for 5 minutes, then drain.
- In a small bowl, whisk together olive oil, fresh lemon juice, minced garlic, salt, and freshly ground black pepper to make the dressing.
- Place the sliced cucumbers, halved tomatoes, and onions into a large mixing bowl. Pour the dressing over the vegetables, add the chopped fresh herbs, and gently toss with a spoon or tongs to coat evenly without bruising the tomatoes.
- Optionally, sprinkle crumbled feta or toasted pine nuts on top. Taste and adjust seasoning with more salt or lemon juice if needed.
- Serve immediately or chill in the refrigerator for up to 1 hour before serving. Toss gently before serving if chilled.

Use ripe, firm tomatoes to avoid watery salad. Slice cucumbers about 1/8 inch thick for the best crunch. Use good-quality olive oil for better flavor. Avoid overdressing to prevent sogginess.
