  • 24 fresh cherry tomatoes, washed and dried
  • 8 oz mini mozzarella balls (bocconcini or ciliegine), marinated or plain
  • 24 medium fresh basil leaves
  • 23 tbsp balsamic glaze
  • 2 tbsp extra virgin olive oil
  • Kosher salt, to taste
  • Cracked black pepper, to taste
  • Optional: thinly sliced prosciutto
  • Optional: roasted red peppers
  • Optional: baby arugula leaves

Instructions

  1. Wash and dry the cherry tomatoes. Pat mozzarella balls dry with paper towels. Pick fresh basil leaves and set aside.
  2. Thread one cherry tomato onto a skewer, followed by a basil leaf (folded if large), then a mozzarella ball. Repeat for double-stacked skewers or keep it simple with one of each.
  3. Arrange finished skewers on a serving platter, alternating colors for visual appeal. Garnish with extra basil leaves.
  4. Drizzle olive oil and balsamic glaze over the skewers. Sprinkle with kosher salt and cracked black pepper to taste.
  5. Optional: Wrap a thin slice of prosciutto around the mozzarella before threading, or add roasted red pepper or baby arugula for extra flavor.
  6. If prepping ahead, assemble skewers and refrigerate (covered) up to three hours before serving. Add oil and glaze just before serving.

Notes

Keep basil chilled until ready to assemble to prevent wilting. Blot mozzarella dry for tidy skewers. For best flavor, add olive oil and balsamic glaze just before serving. Skewers can be made up to 3 hours ahead and refrigerated. For vegan variation, use plant-based cheese or marinated tofu. All ingredients are naturally gluten-free.
