  • Author: Lena
  • Total Time: 15 minutes
  • Yield: 4 servings 1x

Description

A quick and easy salad featuring crisp cucumbers and ripe tomatoes tossed in a fresh, creamy ranch dressing with herbs. Perfect for summer, this salad is light, satisfying, and full of fresh flavor.

Ingredients

Scale
  • 2 medium cucumbers, thinly sliced (English cucumbers preferred)
  • 3 medium ripe tomatoes, chopped
  • ½ cup sour cream (full-fat recommended; Greek yogurt as substitute)
  • ¼ cup mayonnaise
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh chives, thinly sliced
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 tablespoon fresh lemon juice
  • Salt to taste (start with ½ teaspoon)
  • Black pepper to taste
  • Optional: pinch of smoked paprika

Instructions

  1. Rinse cucumbers and tomatoes under cold water. Slice cucumbers thinly (about 1/8 inch thick) and chop tomatoes into bite-sized pieces. Place in a mixing bowl.
  2. In a separate bowl, combine sour cream, mayonnaise, lemon juice, garlic powder, onion powder, and smoked paprika if using. Whisk until smooth and creamy.
  3. Add salt and pepper to taste. Fold in chopped dill, parsley, and chives gently to keep herbs vibrant.
  4. Pour the dressing over the cucumber and tomato mixture. Toss thoroughly to coat all pieces evenly.
  5. Optional: Cover and refrigerate for 15-20 minutes to let flavors meld.
  6. Before serving, taste and adjust salt, pepper, or lemon juice as needed.

Notes

For best texture, slice cucumbers about 1/8 inch thick. If cucumbers are watery, sprinkle with salt and drain excess liquid before mixing. Use fresh herbs for best flavor; dried herbs can be substituted in smaller amounts. Chill salad for 15-20 minutes before serving to meld flavors. Adjust seasoning after tossing to avoid over-salting. For vegan version, substitute vegan mayo and dairy-free yogurt with a splash of apple cider vinegar.
