Ingredients
- 2 medium cucumbers, thinly sliced (English cucumbers preferred)
- 3 medium ripe tomatoes, chopped
- ½ cup sour cream (full-fat recommended; Greek yogurt as substitute)
- ¼ cup mayonnaise
- 2 tablespoons fresh dill, chopped
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh chives, thinly sliced
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 tablespoon fresh lemon juice
- Salt to taste (start with ½ teaspoon)
- Black pepper to taste
- Optional: pinch of smoked paprika
Instructions
- Rinse cucumbers and tomatoes under cold water. Slice cucumbers thinly (about 1/8 inch thick) and chop tomatoes into bite-sized pieces. Place in a mixing bowl.
- In a separate bowl, combine sour cream, mayonnaise, lemon juice, garlic powder, onion powder, and smoked paprika if using. Whisk until smooth and creamy.
- Add salt and pepper to taste. Fold in chopped dill, parsley, and chives gently to keep herbs vibrant.
- Pour the dressing over the cucumber and tomato mixture. Toss thoroughly to coat all pieces evenly.
- Optional: Cover and refrigerate for 15-20 minutes to let flavors meld.
- Before serving, taste and adjust salt, pepper, or lemon juice as needed.

For best texture, slice cucumbers about 1/8 inch thick. If cucumbers are watery, sprinkle with salt and drain excess liquid before mixing.
