A light and refreshing salad featuring cucumbers, tomatoes, mozzarella, basil, and balsamic glaze—perfect for summer evenings.


Ingredients

  • 1 English cucumber, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella balls (bocconcini or ciliegine)
  • 1/4 cup fresh basil leaves, torn
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic glaze
  • Salt and pepper to taste

Instructions

  1. Wash the cucumber and tomatoes thoroughly. Slice the cucumber into thin rounds and halve the cherry tomatoes. Set them aside.
  2. Drain the mozzarella balls and pat them dry with a paper towel. If they’re larger, cut them into bite-sized pieces.
  3. In a large mixing bowl, gently toss together the cucumber slices, cherry tomatoes, mozzarella balls, and torn basil leaves.
  4. Drizzle the olive oil over the salad and add a pinch of salt and pepper to taste. Toss lightly to coat everything evenly.
  5. Just before serving, drizzle the balsamic glaze over the salad for a sweet and tangy finish.
  6. Transfer the salad to a serving bowl or platter. Garnish with additional basil leaves if desired and enjoy immediately!

Notes

Chill the salad for 10–15 minutes before serving for extra refreshment. Add balsamic glaze just before serving to avoid a messy appearance.
