Description

  • 1 teaspoon fresh lemon juice
  • Pinch of salt
  • Freshly ground black pepper, to taste
  • 1 tablespoon fresh dill, finely chopped (optional)
  • Everything seasoning blend (sesame seeds, poppy seeds, garlic, onion, salt), for sprinkling
  • Olive oil, a small drizzle (optional)

Instructions

  1. Slice the English cucumber lengthwise into thin strips about 1/8 inch thick and 4-5 inches long using a sharp knife or mandoline. Scoop out seeds if thick to avoid sogginess.
  2. In a mixing bowl, combine softened cream cheese, fresh lemon juice, salt, and pepper. Stir until smooth and creamy. Fold in fresh dill if using.
  3. Lay a cucumber slice flat on a cutting board. Spread a thin, even layer of the cream cheese mixture along the entire length of the slice using a spreading knife or small spatula.
  4. Starting from one end, carefully roll the cucumber slice into a tight cylinder. Place each roll seam-side down on a serving plate.
  5. Generously sprinkle everything seasoning over the tops of the roll-ups. Add a tiny drizzle of olive oil if desired.
  6. Chill the roll-ups in the refrigerator for 10-15 minutes to allow flavors to meld and cream cheese to firm up slightly before serving.

Notes

Use softened cream cheese for easy spreading to avoid tearing cucumber slices. Thin cucumber slices are essential for easy rolling. Pat cucumbers dry if very juicy to prevent sogginess.
