  • 2 large English cucumbers, thinly sliced lengthwise
  • 1 cup shredded carrots
  • 1 cup cooked shredded chicken or turkey (optional)
  • 1 avocado, sliced
  • 1/4 cup fresh mint leaves
  • 1/2 cup plain Greek yogurt (or dairy-free coconut yogurt)
  • 1/4 cup mayonnaise (or avocado mayo)
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 1 tablespoon fresh lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Wash and dry the cucumbers. Using a mandoline or vegetable peeler, slice them lengthwise into thin strips.
  2. In a mixing bowl, combine Greek yogurt, mayonnaise, parsley, basil, lemon juice, garlic, salt, and pepper. Whisk until smooth and creamy. Adjust seasoning to taste.
  3. Shred carrots, slice avocado, and arrange mint leaves. If using, shred cooked chicken or turkey.
  4. Lay a cucumber slice flat on a cutting board. Place a small amount of shredded carrot, avocado, chicken, and mint at one end of the slice.
  5. Carefully roll the cucumber slice into a tight spiral, starting at the end with the fillings. Repeat with remaining cucumber slices and fillings.
  6. Arrange the wraps on a platter. Serve with a small bowl of Green Goddess Dressing for dipping.
