- 2 large English cucumbers, thinly sliced lengthwise
- 1 cup shredded carrots
- 1 cup cooked shredded chicken or turkey (optional)
- 1 avocado, sliced
- 1/4 cup fresh mint leaves
- 1/2 cup plain Greek yogurt (or dairy-free coconut yogurt)
- 1/4 cup mayonnaise (or avocado mayo)
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- 1 tablespoon fresh lemon juice
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Wash and dry the cucumbers. Using a mandoline or vegetable peeler, slice them lengthwise into thin strips.
- In a mixing bowl, combine Greek yogurt, mayonnaise, parsley, basil, lemon juice, garlic, salt, and pepper. Whisk until smooth and creamy. Adjust seasoning to taste.
- Shred carrots, slice avocado, and arrange mint leaves. If using, shred cooked chicken or turkey.
- Lay a cucumber slice flat on a cutting board. Place a small amount of shredded carrot, avocado, chicken, and mint at one end of the slice.
- Carefully roll the cucumber slice into a tight spiral, starting at the end with the fillings. Repeat with remaining cucumber slices and fillings.
- Arrange the wraps on a platter. Serve with a small bowl of Green Goddess Dressing for dipping.
