Ingredients

  • 2 skin-on salmon fillets (6 ounces / 170g each), fresh or thawed
  • Juice of 1 fresh lemon plus thin lemon slices for garnish
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh oregano, chopped
  • 2 cloves garlic, minced
  • 3 tablespoons extra virgin olive oil
  • Sea salt, to taste
  • Black pepper, to taste
  • Optional: pinch of crushed red pepper flakes
  • Optional: pinch of smoked paprika

Instructions

  1. Pat the salmon fillets dry with paper towels. Season both sides generously with sea salt and black pepper.
  2. In a small bowl, combine chopped parsley, dill, oregano, garlic, lemon juice, and olive oil. Stir to blend the flavors. Add crushed red pepper flakes if desired.
  3. Heat a non-stick or cast iron skillet over medium-high heat until a drop of water sizzles and evaporates immediately.
  4. Add 1 tablespoon olive oil to the pan and swirl to coat. Place salmon fillets skin side down. Press lightly with a spatula for even contact. Cook undisturbed for 6-7 minutes until skin is golden and crisp and color changes about two-thirds up the fillet.
  5. Carefully flip the fillets and cook flesh side for another 3-4 minutes until salmon flakes easily but remains moist inside.
  6. Remove salmon from the pan and let rest for 1-2 minutes. Spoon the lemon herb mixture over the top.
  7. Garnish with thin lemon slices and extra herb sprigs if desired. Serve immediately.

Notes

Patting the salmon dry before cooking is crucial for crispy skin. Preheat the pan properly and avoid flipping the salmon too soon to prevent sticking. Let the salmon rest briefly after cooking to redistribute juices. For oven-baking, roast at 400°F (200°C) for 12-15 minutes after applying the herb mixture.
