  • 12 tablespoons honey or maple syrup
  • 2 ripe nectarines, thinly sliced
  • 1 cup (90 g) rolled oats
  • 1/4 cup (30 g) chopped nuts (almonds or pecans)
  • 2 tablespoons seeds (pumpkin or sunflower, optional)
  • 2 tablespoons honey (for granola)
  • 1 tablespoon olive oil or melted coconut oil
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • Fresh mint leaves for garnish (optional)
  • Chia seeds or flaxseeds for nutrition boost (optional)

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a medium bowl, combine rolled oats, chopped nuts, seeds (if using), honey, olive or coconut oil, ground cinnamon, and vanilla extract. Stir until everything is evenly coated.
  3. Spread the granola mixture in a thin layer on a rimmed baking sheet lined with parchment paper or a silicone mat.
  4. Bake for 20–25 minutes, stirring halfway through. Watch closely after 15 minutes to avoid burning.
  5. Remove from oven and let the granola cool completely on the baking sheet to crisp up.
  6. While granola cools, mix Greek yogurt with 1–2 tablespoons honey or maple syrup in a bowl. Adjust sweetness to taste.
  7. Wash and thinly slice the nectarines.
  8. In serving glasses or bowls, layer a spoonful of yogurt, followed by nectarine slices, then a generous sprinkle of granola. Repeat layers until ingredients are used, finishing with granola on top.
  9. Garnish with fresh mint leaves or a sprinkle of chia seeds if desired.
  10. Serve immediately for maximum crunch or chill briefly if preferred cold.

Notes

For best granola texture, use Bob’s Red Mill rolled oats. Stir granola halfway through baking to ensure even toasting. Layer parfait just before serving to keep granola crunchy. Granola can be stored in an airtight container at room temperature for up to two weeks. If granola softens, toast briefly in a dry skillet to restore crunch. Nectarines can be substituted with peaches, plums, or berries. For dairy-free or vegan versions, use plant-based yogurt and maple syrup instead of honey.
