A quick and easy no-cook wrap featuring fresh mozzarella, ripe tomatoes, basil, and a sweet-tart balsamic glaze wrapped in a soft tortilla. Perfect for a light meal or snack with fresh, vibrant flavors.


Ingredients

  • 8-inch flour tortillas (plain or flavored like spinach or sun-dried tomato)
  • 8 oz fresh mozzarella (sliced or small balls, whole milk preferred)
  • 2 medium ripe tomatoes (Roma or vine-ripened, sliced about 1/4 inch thick)
  • About 12 fresh basil leaves (washed and patted dry)
  • 3 tablespoons balsamic glaze (store-bought or homemade by reducing balsamic vinegar with honey)
  • 1 tablespoon extra virgin olive oil
  • Salt to taste (flaky sea salt recommended)
  • Freshly ground black pepper to taste
  • Optional add-ins: avocado slices, thinly sliced red onion, baby arugula

Instructions

  1. Wash and dry basil leaves carefully to avoid sogginess.
  2. Slice tomatoes into medium-thick slices, about 1/4 inch thick.
  3. Slice mozzarella into pieces or pull apart small mozzarella balls.
  4. Optionally warm tortillas in a dry skillet or microwave for about 30 seconds to soften.
  5. Lay a tortilla flat on a prep surface.
  6. Place 3-4 slices of tomato in a line about 1 inch from one edge of the tortilla.
  7. Add mozzarella slices on top of the tomatoes.
  8. Tuck fresh basil leaves over the cheese.
  9. Lightly sprinkle flaky sea salt and freshly ground black pepper over the layered ingredients.
  10. Drizzle about 1 teaspoon of extra virgin olive oil and 1 tablespoon of balsamic glaze over the filling.
  11. Starting from the filled edge, gently but firmly roll the tortilla over the ingredients, tucking in the sides to form a neat wrap.
  12. If the tortilla feels dry or cracks, add a tiny dab of olive oil to the edges before rolling.
  13. Serve immediately or wrap tightly in plastic wrap and refrigerate up to 2 hours before serving.
  14. If refrigerated, let sit at room temperature for 10 minutes before eating to soften the wrap.

Notes

Pat mozzarella and basil dry to prevent sogginess. Avoid overfilling the wrap to prevent tearing. If balsamic glaze is too thick, loosen with a few drops of water before drizzling. Warm tortillas slightly to prevent cracking when rolling. Wraps are best eaten fresh but can be refrigerated up to 2 hours wrapped tightly in plastic.
