Instructions

  1. Rinse 1 cup of strawberries and 1 cup of blueberries under cold water. Hull and slice the strawberries into thin pieces about ¼ inch thick. Pat all berries dry with paper towels to prevent extra moisture.
  2. In a medium bowl, combine 2 cups of plain Greek yogurt with 1 teaspoon vanilla extract and 2 tablespoons honey if desired. Stir gently until smooth and creamy. Adjust sweetness to taste.
  3. Choose serving cups or glasses. Start with about 3 tablespoons of yogurt at the bottom, then add a layer of sliced strawberries followed by a layer of blueberries (about 2 tablespoons each). Repeat the layers once more to create a red-white-blue effect.
  4. Top each parfait with about 1 tablespoon of granola. If using chia seeds or flaxseeds, sprinkle about 1 teaspoon on top or mix into the yogurt before layering.
  5. Garnish with a fresh mint leaf. Cover the parfait cups and refrigerate for at least 10 minutes before serving to let flavors meld and chill.
