- 1 ripe avocado, sliced or mashed

- Thinly sliced cucumber

- Hummus, mustard, or light mayo
- Salt, pepper, and a pinch of garlic powder
Instructions
- Toast the bread slices until golden and slightly crispy.
- Slice or mash the avocado in a small bowl and season with salt and pepper.
- Thinly slice the cucumber, tomato, and bell peppers. Tear or chop the lettuce into manageable pieces.
- Spread hummus, mustard, or mayo onto one slice of bread.
- Layer the veggies on top of the spread: lettuce, cucumber, tomato, and bell peppers.
- Add the sliced or mashed avocado on top of the veggies and sprinkle with garlic powder, salt, and pepper.
- Place the second slice of bread on top, gently press down, slice in half, and serve immediately.
