Ingredients

  • Seedless watermelon, cut into 1-inch cubes
  • Feta cheese, crumbled or small blocks (about 1/2 cup or 75 g)
  • Fresh mint leaves, whole and washed
  • Honey, 2 tablespoons
  • Freshly squeezed lime juice, 1 tablespoon
  • Optional: pinch of flaky sea salt

Instructions

  1. Cut the seedless watermelon into 1-inch cubes. Pat dry gently with paper towels if too juicy.
  2. Slice feta into small cubes roughly the same size as the watermelon or use crumbled feta (about 1/2 cup). Keep chilled until ready to assemble.
  3. Rinse fresh mint leaves and pat dry thoroughly. Remove any tough stems.
  4. In a small bowl, combine 2 tablespoons honey with 1 tablespoon freshly squeezed lime juice. Stir or whisk until smooth.
  5. Thread watermelon cube, mint leaf, and feta cube onto each skewer, repeating the pattern 2–3 times depending on skewer length.
  6. Lay skewers on a serving platter and drizzle evenly with the honey lime mixture. Optionally, sprinkle a pinch of flaky sea salt on top.
  7. Serve immediately or chill for up to 30 minutes before serving.

Notes

Use firm, seedless watermelon with bright pink flesh for best results. If honey is thick, warm slightly before mixing. Assemble skewers just before serving to keep mint fresh and prevent sogginess. Optional grilling of watermelon cubes for smoky flavor. Add flaky sea salt for enhanced flavor. Can substitute agave syrup and tofu for a vegan version.
