  • 1 cup full-fat coconut milk (unsweetened)
  • 1 tablespoon fresh lime zest
  • 2 tablespoons fresh lime juice
  • 1 to 2 tablespoons honey or agave syrup (optional)
  • Pinch of sea salt

Instructions

  1. Cut about 4 cups (600g) of seedless watermelon into small chunks and remove any seeds.
  2. Zest 1 tablespoon of lime zest using a microplane, then squeeze out 2 tablespoons of fresh lime juice, avoiding seeds.
  3. Add watermelon chunks and 1 cup (240ml) of full-fat coconut milk to a blender and blend on high until smooth, about 1 minute.
  4. Add 1 to 2 tablespoons of honey or agave syrup (optional), a pinch of sea salt, lime zest, and lime juice. Pulse a few times to incorporate and taste to adjust sweetness or lime.
  5. Pour the mixture into popsicle molds, leaving a small gap at the top for expansion, and insert sticks.
  6. Freeze molds for at least 4-6 hours or overnight for best texture.
  7. To unmold, run warm water briefly over the outside of the molds for a few seconds, then gently pull on the sticks and serve immediately.

Notes

Use ripe watermelon for natural sweetness; adjust honey or agave syrup accordingly. Blend thoroughly to avoid icy chunks. Keep coconut milk chilled before blending to maintain creaminess. Run warm water over molds to release popsicles easily. Variations include adding fresh mint, berries, or a pinch of cayenne for a spicy kick.
