  • 8 oz white chocolate, chopped
  • 4 oz ruby or pink chocolate, chopped (optional)
  • 1/2 cup rosé gummy bears or rosé-flavored candy pearls
  • 1/4 cup freeze-dried raspberries or strawberries
  • 1/4 cup mini pretzels, broken up
  • 1/4 cup mini marshmallows or meringue bits (optional)
  • 2 tablespoons slivered almonds or pistachios (optional)
  • Edible gold leaf or gold sprinkles (optional)
  • Flaky sea salt, to taste

Instructions

  1. Line an 11×17-inch rimmed baking sheet with parchment paper, leaving some overhang for easy lifting. Measure and prep all toppings before starting.
  2. In separate microwave-safe bowls, melt the dark, white, and ruby chocolates in 30-second bursts, stirring after each. Alternatively, melt gently over a double boiler. If chocolate seizes, add 1/2 teaspoon coconut oil and stir.
  3. Pour the melted dark chocolate onto the parchment and spread into a rough rectangle about 1/4-inch thick.
  4. Dollop spoonfuls of melted white and ruby chocolate over the dark base. Swirl with a skewer or knife tip to create a marbled effect. Do not overmix.
  5. While chocolate is still wet, scatter rosé gummies, freeze-dried berries, pretzel bits, marshmallows, and nuts evenly over the surface. Press larger pieces in gently.
  6. Sprinkle with edible gold leaf or gold sprinkles and finish with flaky sea salt.
  7. Transfer the baking sheet to the fridge and chill until firm, about 20-30 minutes. Alternatively, let set at room temperature if cool enough.
  8. Lift the set bark out using the parchment. Break into irregular pieces with a sharp knife or your hands.
  9. Arrange the bark on a serving board, filling gaps with extra gummies, berries, or fresh flowers if desired.

Use high-quality chocolate for best results. Have all toppings ready before spreading chocolate, as it sets quickly.
