  • 1/2 cup popcorn kernels or 10 cups popped plain popcorn
  • 2 tablespoons unsalted butter, melted
  • 1/2 teaspoon fine sea salt
  • 1/2 cup rosé wine
  • 2 tablespoons granulated sugar
  • 1 teaspoon lemon zest (optional)
  • 2 cups fresh strawberries, hulled and sliced
  • 1 tablespoon sugar or honey
  • 1 teaspoon lemon juice
  • 3 ounces white chocolate, melted
  • 1/2 cup freeze-dried strawberries, crushed (optional)
  • Edible glitter or pink sprinkles (optional)
  • Mini pretzels, yogurt-covered raisins, or heart-shaped candies
  • Fresh mint leaves (optional, for garnish)

Instructions

  1. Pop 1/2 cup popcorn kernels using your preferred method to yield about 10 cups popped popcorn. If using microwave popcorn, choose a plain variety.
  2. Spread popcorn on a large baking sheet lined with parchment paper. Remove any unpopped kernels.
  3. In a medium saucepan, combine 1/2 cup rosé wine and 2 tablespoons sugar. Bring to a gentle simmer over medium heat, stirring occasionally, until reduced by half (5-8 minutes). Stir in lemon zest if using. Let cool slightly.
  4. Transfer popcorn to a large mixing bowl. Drizzle rosé syrup evenly over popcorn, tossing to coat.
  5. Drizzle melted butter and sprinkle sea salt over popcorn. Toss again until well-coated. Spread back onto the lined baking sheet to cool for at least 10 minutes.
  6. In a small bowl, combine sliced strawberries with sugar or honey and lemon juice. Toss to coat and let sit for 10-15 minutes.
  7. Place white chocolate in a microwave-safe bowl. Microwave in 10-15 second bursts, stirring between each, until melted and smooth (or melt gently in a double boiler).
  8. Arrange rosé popcorn on your serving board. Drizzle with melted white chocolate, then sprinkle with freeze-dried strawberries and edible glitter or sprinkles if desired.
  9. Fan out the macerated strawberries around the popcorn.
  10. Fill in gaps with mini pretzels, candies, or yogurt-covered raisins. Garnish with fresh mint leaves if desired.
  11. Serve immediately, or let the chocolate set for 10-15 minutes before transporting.

Notes

For gluten-free, use gluten-free pretzels or omit. For dairy-free/vegan, use coconut oil and dairy-free white chocolate. Assemble just before serving for best texture. Store popcorn and strawberries separately if making ahead. If syrup thickens too much, add a splash of rosé to loosen. Revive popcorn in a low oven if it softens.
