Description

A cozy, crowd-pleasing dessert that recreates the classic campfire s’mores experience indoors with melted chocolate and toasted marshmallows in a skillet.


Ingredients

  • 1 ½ cups (270g) semi-sweet chocolate chips
  • 2 cups (about 120g) mini marshmallows
  • 1 sleeve (8-10 crackers) graham crackers
  • 2 tablespoons (28g) unsalted butter, room temperature
  • 1 teaspoon vanilla extract
  • Optional: a pinch of sea salt

Instructions

  1. Preheat an 8-inch cast-iron skillet over low heat on the stove for about 2 minutes until warm but not smoking.
  2. Add 2 tablespoons of unsalted butter to the skillet and let it melt completely, swirling to coat the bottom evenly.
  3. Pour in 1 ½ cups of semi-sweet chocolate chips and stir continuously with a rubber spatula to melt slowly, about 3-5 minutes, until smooth and glossy.
  4. Stir in 1 teaspoon vanilla extract and a pinch of sea salt if using.
  5. Spread the melted chocolate evenly across the skillet bottom.
  6. Generously sprinkle 2 cups of mini marshmallows evenly over the melted chocolate.
  7. Toast the marshmallows using one of the following methods: broiler for 1-2 minutes watching closely until golden brown; stovetop covered on low heat for 3-4 minutes until softened and slightly browned; or use a kitchen torch to toast evenly.
  8. Remove from heat and serve immediately warm with graham crackers for dipping.

Notes

Melt chocolate over low heat to avoid scorching. Watch marshmallows closely when broiling to prevent burning. Cover skillet during stovetop toasting to help marshmallows melt evenly. If chocolate thickens while toasting marshmallows, gently warm skillet on very low heat and stir. For gluten-free, use gluten-free graham crackers; for dairy-free, use vegan chocolate chips, coconut oil instead of butter, and vegan marshmallows.
