A quick and easy frozen protein treat combining creamy Greek yogurt with crunchy nuts and sweet berries, perfect for a refreshing and guilt-free snack.

- 2 cups (480 ml) Greek yogurt (full-fat or 2%)
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- 1 cup (150 g) mixed berries (fresh or frozen, chopped if large)
- 1/2 cup (60 g) chopped nuts (almonds, pistachios, or walnuts, toasted)
- 2 tablespoons chia seeds or flaxseeds (optional)
- 1/4 cup (40 g) dark chocolate chips or shavings (optional)
Instructions
- In a medium bowl, combine 2 cups (480 ml) of Greek yogurt with 2 tablespoons of honey (or maple syrup) and 1 teaspoon of vanilla extract. Stir until smooth and well blended, about 2 minutes. If using protein powder, mix it in now ensuring no lumps remain.
- Chop 1 cup (150 g) of mixed berries if needed, and roughly chop 1/2 cup (60 g) of nuts. Toast nuts in a dry pan over medium heat for 2-3 minutes, then set aside to cool.
- Line a rimmed baking sheet (about 9×13 inches / 23×33 cm) with parchment paper or a silicone baking mat.
- Pour the yogurt mixture onto the lined baking sheet and spread evenly to about 1/4 inch (0.6 cm) thick using a spatula or spoon.
- Scatter the mixed berries, toasted nuts, and optional dark chocolate chips evenly over the yogurt layer. Press gently to stick but avoid smearing.
- Place the baking sheet flat in the freezer for at least 3 hours or until completely frozen and firm.
- Remove from freezer, peel the bark off the parchment, and break into rough chunks or shards. Store in an airtight container in the freezer.
Notes
Keep Greek yogurt chilled until mixing to maintain thick consistency. Toast nuts for extra flavor. Pat fresh berries dry to avoid sogginess. Store bark in a single layer in an airtight container in the freezer for up to 2 weeks. If bark softens while handling, refreeze for 10-15 minutes. Thinner bark freezes faster but is more fragile.
