- 6 large eggs, hard-boiled and peeled
- 1/3 cup (80g) plain Greek yogurt, full-fat or low-fat
- 1 tablespoon Dijon mustard
- 1 teaspoon white vinegar
- 1/4 teaspoon garlic powder
- Salt to taste (start with 1/4 teaspoon)
- Freshly ground black pepper to taste
- Smoked paprika for garnish
- Fresh chives or dill, finely chopped (optional)
Instructions
- Place 6 large eggs in a medium saucepan and cover with cold water by about an inch. Bring to a gentle boil over medium-high heat (about 10 minutes). Once boiling, immediately transfer the eggs to a bowl of ice water. Let them chill for 10 minutes to stop cooking and make peeling easier.
- Carefully peel the cooled eggs, rinse to remove any shell bits, and slice each egg lengthwise. Gently remove yolks and place in a mixing bowl.
- Mash the yolks with a fork until crumbly. Add 1/3 cup (80g) of plain Greek yogurt, 1 tablespoon Dijon mustard, 1 teaspoon white vinegar, 1/4 teaspoon garlic powder, salt, and pepper to taste. Mix until smooth and creamy. If the mixture feels too stiff, add a little extra yogurt, a teaspoon at a time.
- Spoon or pipe the filling back into the egg white halves. If piping, a star tip adds a nice touch, but a spoon works perfectly fine and gives a rustic look.
- Sprinkle smoked paprika over the filled eggs, and add fresh chopped chives or dill if desired. Chill in the fridge for at least 15 minutes before serving to let flavors meld.
Notes
Use eggs that are a few days old for easier peeling. Peel eggs under running water to remove stubborn shell bits. If filling is too runny, chill to thicken. A piping bag with a star tip creates a professional look but a spoon works fine. Store covered in the refrigerator for up to 2 days; avoid freezing.
