Description
A vibrant, creamy chicken salad featuring smoky charred corn, fresh veggies, and a tangy yogurt-based dressing. Perfect for gatherings, quick lunches, or a light yet hearty meal.
Ingredients
Scale
- 2 cups cooked chicken breast, shredded or diced
- 1 1/2 cups corn kernels, fresh or frozen, charred
- 1/2 cup red onion, finely diced
- 1 cup bell peppers, diced
- 1/4 cup cilantro, freshly chopped
- 1/2 cup plain Greek yogurt
- 2 tablespoons mayonnaise
- 2 tablespoons lime juice, freshly squeezed
- 1 teaspoon chili powder
- 1/4 cup Cotija or feta cheese, crumbled
- Salt and pepper to taste
Instructions
- Prepare the chicken: Grill or bake chicken breasts until fully cooked (about 20 minutes at 375°F/190°C). Let cool slightly before shredding or dicing.
- Char the corn: Heat a skillet over medium-high heat. Add corn kernels and cook, stirring occasionally, until lightly charred (about 5-7 minutes).
- Chop the veggies: Dice red onion, bell peppers, and cilantro. Set aside.
- Make the dressing: In a small bowl, whisk together Greek yogurt, mayonnaise, lime juice, chili powder, salt, and pepper until smooth and creamy.
- Combine the salad: In a large mixing bowl, combine chicken, charred corn, diced veggies, cilantro, and crumbled cheese. Pour dressing over the top.
- Toss and serve: Use tongs to gently toss the salad until evenly coated in dressing. Serve immediately or chill for 10-15 minutes to let flavors meld.
