  • 1/2 cup (100g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 1/4 cups (280g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (170g) butterscotch chips
  • 1 cup (170g) toffee bits
  • Optional: Chopped nuts like pecans or walnuts

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking pan with parchment paper or grease it lightly.
  2. In a medium bowl, whisk together 2 1/4 cups (280g) of all-purpose flour, 1 teaspoon of baking soda, and 1/2 teaspoon of salt. Set aside.
  3. In a large mixing bowl, beat 1 cup (226g) of softened unsalted butter, 1 cup (220g) of brown sugar, and 1/2 cup (100g) of granulated sugar until light and fluffy—around 2-3 minutes.
  4. Beat in 2 large eggs, one at a time, followed by 2 teaspoons of vanilla extract. Scrape down the sides of the bowl to ensure everything is well incorporated.
  5. Gradually add the flour mixture to the wet ingredients, mixing just until combined. Avoid overmixing.
  6. Use a spatula to gently fold in 1 cup (170g) of butterscotch chips and 1 cup (170g) of toffee bits.
  7. Evenly press the cookie dough into your prepared baking pan. Smooth the surface with a spatula.
  8. Bake for 25-30 minutes or until the edges are golden and the center is set. A toothpick inserted into the middle should come out clean.
  9. Let the bars cool completely in the pan before slicing into squares.
