- 1 cup (220g) brown sugar, packed tightly
- 1/2 cup (100g) granulated sugar
- 2 large eggs, room temperature
- 2 teaspoons vanilla extract
- 2 1/4 cups (280g) all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup (170g) butterscotch chips
- 1 cup (170g) toffee bits
- Optional: Chopped nuts like pecans or walnuts
Instructions
- Preheat your oven to 350°F (175°C). Line your baking pan with parchment paper or grease it lightly.
- In a medium bowl, whisk together 2 1/4 cups (280g) of all-purpose flour, 1 teaspoon of baking soda, and 1/2 teaspoon of salt. Set aside.
- In a large mixing bowl, beat 1 cup (226g) of softened unsalted butter, 1 cup (220g) of brown sugar, and 1/2 cup (100g) of granulated sugar until light and fluffy—around 2-3 minutes.
- Beat in 2 large eggs, one at a time, followed by 2 teaspoons of vanilla extract. Scrape down the sides of the bowl to ensure everything is well incorporated.
- Gradually add the flour mixture to the wet ingredients, mixing just until combined. Avoid overmixing.
- Use a spatula to gently fold in 1 cup (170g) of butterscotch chips and 1 cup (170g) of toffee bits.
- Evenly press the cookie dough into your prepared baking pan. Smooth the surface with a spatula.
- Bake for 25-30 minutes or until the edges are golden and the center is set. A toothpick inserted into the middle should come out clean.
- Let the bars cool completely in the pan before slicing into squares.
