  • 1/4 cup olive oil
  • 3 tablespoons fresh lemon juice
  • 3 garlic cloves, minced
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon black pepper, freshly ground
  • 1/2 teaspoon salt
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Wooden or metal skewers (soaked if wooden)

Instructions

  1. Prepare the marinade by whisking together olive oil, lemon juice, minced garlic, soy sauce, honey, smoked paprika, ground cumin, salt, black pepper, and crushed red pepper flakes in a medium bowl.
  2. Add the cubed chicken to the marinade, stir to coat, cover, and refrigerate for at least 30 minutes, ideally 2-4 hours.
  3. While the chicken marinates, chop the bell peppers, slice the onion into wedges, and rinse the cherry tomatoes.
  4. Preheat the grill to medium-high heat (375-400°F). If using a grill pan, heat over medium-high and lightly oil the surface.
  5. Thread the marinated chicken pieces alternately with vegetables onto skewers, leaving space between pieces.
  6. Grill the kabobs for 10-12 minutes, turning every 3-4 minutes until chicken reaches an internal temperature of 165°F and has slightly charred edges.
  7. Let the kabobs rest for 5 minutes before serving.
