Instructions

  1. Preheat your oven to 325°F (160°C). Line a 12-count muffin tin with cupcake liners.
  2. In a small bowl, mix graham cracker crumbs, melted butter, and 2 tbsp granulated sugar until the mixture resembles wet sand. Spoon about 1 tablespoon of the mixture into each liner and press down firmly.
  3. Bake the crust for 5 minutes. Remove and let cool slightly.
  4. In a large bowl, beat softened cream cheese until smooth. Add 1/2 cup granulated sugar, Greek yogurt, and a pinch of salt. Mix until creamy.
  5. Add the egg and vanilla extract, mixing just until combined.
