  • 1/2 cup (100g) brown sugar
  • 2 large eggs, room temperature
  • 1/4 cup (60g) unsalted butter, melted
  • 1 tsp vanilla extract
  • 3 tbsp honey (for drizzle)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or line it with parchment paper.
  2. In a medium bowl, sift together the flour, baking soda, baking powder, and salt. Whisk to combine evenly.
  3. In a separate large bowl, mash the bananas until smooth but still a bit chunky. Stir in the peanut butter until fully blended.
  4. Add the brown sugar to the banana mixture and mix well. Beat in the eggs one at a time, then add the melted butter and vanilla extract.
  5. Gradually fold the dry ingredients into the wet ingredients, stirring gently with a spatula. Do not overmix; a few lumps are okay.
  6. Pour the batter into the prepared loaf pan and spread evenly. Tap the pan lightly on the counter to release air bubbles.
  7. Bake for 50–60 minutes, starting to check at 50 minutes by inserting a toothpick into the center. It should come out clean or with a few moist crumbs.
  8. Let the bread cool in the pan for 15 minutes, then transfer to a wire rack.
  9. While still warm, drizzle 3 tablespoons of honey over the top. Warm the honey slightly if needed for a smoother drizzle.
  10. Wait until the bread is mostly cool before slicing and serving.

Notes

Use ripe bananas with brown spots but not overly mushy for best texture. Do not overmix the batter to keep the bread tender. Warm honey slightly if too thick for easier drizzling. Room temperature eggs help create a lighter crumb. You can substitute almond flour for gluten-free, or swap peanut butter for seed butters for nut-free options.
