- 2 cups (250 g) all-purpose flour
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup (230 g) unsalted butter, softened
- 1 ¾ cups (350 g) granulated sugar
- 4 large eggs, room temperature
- 2 teaspoons vanilla extract
- 1 cup (240 ml) buttermilk
- 1 cup (100 g) pecans, chopped
- 2 tablespoons (30 g) unsalted butter, melted
- 2 tablespoons (30 g) brown sugar
- ½ teaspoon ground cinnamon
- 1 cup (230 g) unsalted butter, softened
- 4 cups (500 g) powdered sugar
- 2 teaspoons vanilla extract
- 2–3 tablespoons (30–45 ml) heavy cream or milk
Instructions
- Preheat your oven to 350°F (175°C). Grease and line your baking pans with parchment paper.
- Mix the chopped pecans with melted butter, brown sugar, and cinnamon. Spread them on a baking sheet and toast for 8–10 minutes, stirring halfway through. Set aside to cool.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large bowl, beat the softened butter with granulated sugar until light and fluffy—about 2–3 minutes.
- Beat in eggs one at a time, then mix in vanilla extract.
- Gradually add the flour mixture and buttermilk to the batter, alternating between the two. Begin and end with the flour mixture.
- Gently fold the cooled toasted pecans into the batter.
- Pour the batter evenly into the prepared pans. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to a cooling rack.
- Beat the butter until creamy. Gradually add powdered sugar, vanilla, and heavy cream until the frosting reaches your desired consistency.
- Place one layer on a serving plate, spread frosting on top, then add the second layer. Frost the top and sides, then sprinkle with extra toasted pecans for decoration.
