  • 810 slices thick-cut white, whole wheat, or brioche bread (heart-shaped cutter friendly)
  • 46 croissants or English muffins, split horizontally
  • 6 large eggs, room temperature
  • 8 strips bacon (or turkey bacon or veggie sausage)
  • Cheddar, Swiss, or provolone cheese slices
  • 2 tablespoons (28g) butter
  • Salt & pepper, to taste
  • 12 avocados, sliced
  • 12 ripe tomatoes, sliced
  • Handful baby spinach or arugula
  • 1 cup strawberries or raspberries
  • Strawberry or raspberry jam/jelly
  • Mini pancakes or waffles (optional)
  • Honey or maple syrup, for drizzling
  • Chive cream cheese (optional)
  • Sriracha mayo or hot sauce (optional)
  • Fresh herbs: chives, parsley, or dill (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Lay bacon strips on a foil-lined baking sheet and bake for 12-15 minutes, flipping halfway, until crispy. Drain on paper towels.
  2. Use heart-shaped cookie cutters to cut hearts from bread slices and/or split croissants. Save scraps for croutons or breadcrumbs.
  3. Heat 1 tablespoon butter in a skillet over medium heat. Toast heart-shaped bread on each side for 1-2 minutes until golden. Optionally, toast in bacon drippings for extra flavor.
  4. Whisk eggs with salt and pepper. Melt 1 tablespoon butter in a nonstick skillet over medium-low heat. Scramble eggs gently for soft, creamy curds. Alternatively, fry eggs in heart-shaped cutters.
  5. Layer cheese slices, scrambled eggs, and bacon on half of the toasted bread or croissant hearts. Add avocado or tomato slices and greens if desired.
  6. Arrange spinach, tomato slices, avocado, berries, and pancakes/waffles around the board. Fill small bowls with jam, cream cheese, and syrup.
  7. Fan out heart-shaped sandwiches in the center of the board. Tuck extras and toppings around the edges. Scatter strawberries and herbs as a finishing touch.
  8. Serve immediately, encouraging everyone to build their own sandwich with favorite toppings.

Notes

For vegetarian, skip bacon and add sautéed mushrooms, roasted peppers, and extra greens. Use gluten-free bread for GF guests. Toast bread in bacon fat for extra flavor. Prep toppings ahead and cook eggs last minute for best results. Wipe cookie cutters between uses for clean heart shapes.
