Ingredients
- 1 to 1.5 pounds salmon fillets, skin-on preferred
- Juice of 1 large lemon
- Zest of 1 large lemon
- 2 tablespoons fresh dill, chopped
- 3 tablespoons extra virgin olive oil
- 2 cloves garlic, minced
- 1 teaspoon sea salt
- ½ teaspoon freshly ground black pepper

Instructions
- Preheat your oven to 400°F (200°C).
- In a medium mixing bowl, combine lemon juice, lemon zest, olive oil, minced garlic, chopped dill, sea salt, and black pepper. Whisk until well mixed and fragrant.
- Place salmon fillets skin-side down on a lined baking sheet. Pat dry with paper towels.
- Brush the lemon dill mixture generously over each fillet, coating top and edges evenly.
- Let the salmon rest at room temperature for 10 minutes to absorb the marinade.
- Roast in the oven for 12-15 minutes depending on thickness, aiming for an internal temperature of 125°F (52°C) for medium-rare or 140°F (60°C) for fully cooked.
- Check doneness by gently pressing the thickest part; it should flake easily but remain moist.
- Remove from oven and let rest for 5 minutes to allow juices to redistribute.

For crispier skin, pan-sear salmon skin-side down for 2-3 minutes before roasting. Let salmon rest at room temperature before cooking to ensure even cooking. Avoid overcooking to keep salmon tender and moist. Fresh dill is preferred for best flavor; dried dill can be used but reduce quantity.
