  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1/4 cup (60ml) milk
  • 1/2 cup (100g) brown sugar
  • 1/4 cup (30g) unsweetened cocoa powder
  • 1 3/4 cups (420ml) boiling water

Instructions

  1. Spray your slow cooker with non-stick spray or line it with parchment paper for easy cleanup.
  2. In a large mixing bowl, whisk together the flour, cocoa powder, granulated sugar, baking powder, and salt.
  3. In a medium bowl, combine the melted butter, eggs, vanilla extract, and milk. Stir until smooth.
  4. Gradually add the wet ingredients to the dry mixture, mixing until just combined. Don’t overmix; a few lumps are okay.
  5. Pour the brownie batter into the slow cooker and spread it evenly.
  6. In another bowl, mix the brown sugar and cocoa powder for the chocolate sauce. Sprinkle this mixture evenly over the brownie batter.
  7. Slowly pour the boiling water over the top. Don’t stir—it will create the lava-like sauce while cooking.
  8. Cover the slow cooker and cook on high for 2-2.5 hours, or until the edges are set, but the center is still gooey.
  9. Turn off the heat and let the pudding cool for about 15 minutes before serving. The sauce will thicken as it sits.
