  • 1 teaspoon fresh lemon juice (optional but recommended)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Toast 1 or 2 slices of bread in a toaster or toaster oven until golden and crisp, about 2-3 minutes. Alternatively, toast in a skillet over medium heat for 2-3 minutes per side.
  2. Cut the ripe avocado in half, remove the pit, and scoop the flesh into a small bowl.
  3. Mash the avocado lightly with a fork, leaving some small chunks for texture, about 1-2 minutes.
  4. Drizzle the mashed avocado with fresh lemon juice (if using), add a pinch of salt and freshly ground black pepper, and mix gently.
  5. Add 1 teaspoon of extra virgin olive oil to the avocado mixture and stir lightly.
  6. Spread a generous layer of the avocado mixture evenly over the toasted bread slices.
  7. Sprinkle about 1 teaspoon of everything seasoning on each slice.
  8. Optionally, add a few cracks of black pepper or a tiny drizzle of olive oil on top and serve immediately.

Notes
