- 1 medium ripe avocado, peeled and pitted
- 1–2 slices sturdy bread (sourdough or whole grain recommended)
- 1 teaspoon everything seasoning (sesame seeds, poppy seeds, dried garlic, onion flakes, salt)
- 1 teaspoon extra virgin olive oil
- 1 teaspoon fresh lemon juice (optional but recommended)
- Salt and freshly ground black pepper to taste
Instructions
- Toast 1 or 2 slices of bread in a toaster or toaster oven until golden and crisp, about 2-3 minutes. Alternatively, toast in a skillet over medium heat for 2-3 minutes per side.
- Cut the ripe avocado in half, remove the pit, and scoop the flesh into a small bowl.
- Mash the avocado lightly with a fork, leaving some small chunks for texture, about 1-2 minutes.
- Drizzle the mashed avocado with fresh lemon juice (if using), add a pinch of salt and freshly ground black pepper, and mix gently.
- Add 1 teaspoon of extra virgin olive oil to the avocado mixture and stir lightly.
- Spread a generous layer of the avocado mixture evenly over the toasted bread slices.
- Sprinkle about 1 teaspoon of everything seasoning on each slice.
- Optionally, add a few cracks of black pepper or a tiny drizzle of olive oil on top and serve immediately.
Notes
Use ripe avocados for best texture. If avocado is underripe, microwave for 10-15 seconds to soften slightly. Toast bread well to avoid sogginess. Lemon juice helps prevent avocado browning. Store avocado mixture separately with lemon juice if making ahead.
