  • 3 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 8 ounces cremini or button mushrooms, sliced
  • 1 tablespoon olive oil
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste
  • Optional: splash of Worcestershire sauce or soy sauce

Instructions

  1. Pat the steak cubes dry with paper towels and season lightly with salt and pepper. Slice mushrooms evenly.
  2. Heat a cast iron or heavy skillet over medium-high heat and add 1 tablespoon olive oil until shimmering.
  3. Add steak cubes in a single layer without crowding. Cook undisturbed for 2-3 minutes to develop a crust, then turn and cook another 2-3 minutes until medium-rare or preferred doneness. Remove steak and set aside.
  4. Lower heat to medium. Add 1 tablespoon butter and mushrooms to the pan. Stir occasionally and cook for about 5 minutes until browned and softened. Season with salt and pepper.
  5. Push mushrooms to the side, add remaining 2 tablespoons butter and minced garlic. Stir quickly and cook garlic for about 30 seconds until fragrant.
  6. Return steak bites to the pan and toss to coat in garlic butter sauce. Warm through for 1 minute.
  7. Remove from heat, sprinkle chopped parsley over the top, toss gently, and serve immediately.

Notes

Pat steak dry before searing to ensure a good crust. Avoid overcrowding the pan; cook steak in batches if necessary. Add garlic after mushrooms soften to prevent burning. For dairy-free, substitute butter with olive oil or vegan butter. Leftovers keep well refrigerated for up to 3 days; reheat gently in a skillet.
