  • ½ cup Caesar dressing
  • ¼ cup freshly grated Parmesan cheese
  • 4 large flour tortillas (10-inch size)
  • Lemon zest from half a lemon (optional)
  • Pinch of anchovy paste (optional)

Instructions

  1. Marinate the chicken: In a bowl, combine chicken breasts with olive oil, garlic powder, salt, and pepper. Mix well and let sit for 10 minutes (or up to 30 minutes for deeper flavor).
  2. Preheat the grill or grill pan over medium-high heat for about 5 minutes until hot.
  3. Grill the chicken for 5-7 minutes per side, flipping once, until cooked through and internal temperature reaches 165°F (74°C).
  4. Transfer chicken to a plate and let rest for 5 minutes, then slice thinly against the grain.
  5. Prepare the Caesar salad mix: Toss chopped romaine lettuce with Caesar dressing, lemon zest, and anchovy paste if using.
  6. Assemble the wraps: Lay tortillas flat, layer with dressed romaine, top with sliced grilled chicken, and sprinkle with Parmesan cheese.
  7. Fold the sides in and roll tightly from one end to the other. Slice in half diagonally if desired.

Notes

To avoid soggy wraps, keep lettuce and dressing separate until just before assembling and do not overdress the lettuce. For a warm, toasted wrap, heat in a dry skillet for 1-2 minutes per side after assembling. Chicken thighs can be used instead of breasts with adjusted grilling time. For dairy-free options, use vegan Caesar dressing and omit Parmesan or substitute with nutritional yeast.
