Ingredients
- 1 pound (450g) boneless skinless chicken breasts
- 2 tablespoons extra virgin olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 to 2 cups chopped romaine lettuce
- ½ cup Caesar dressing
- ¼ cup freshly grated Parmesan cheese
- 4 large flour tortillas (10-inch size)
- Lemon zest from half a lemon (optional)
- Pinch of anchovy paste (optional)
Instructions
- Marinate the chicken: In a bowl, combine chicken breasts with olive oil, garlic powder, salt, and pepper. Mix well and let sit for 10 minutes (or up to 30 minutes for deeper flavor).
- Preheat the grill or grill pan over medium-high heat for about 5 minutes until hot.
- Grill the chicken for 5-7 minutes per side, flipping once, until cooked through and internal temperature reaches 165°F (74°C).
- Transfer chicken to a plate and let rest for 5 minutes, then slice thinly against the grain.
- Prepare the Caesar salad mix: Toss chopped romaine lettuce with Caesar dressing, lemon zest, and anchovy paste if using.
- Assemble the wraps: Lay tortillas flat, layer with dressed romaine, top with sliced grilled chicken, and sprinkle with Parmesan cheese.
- Fold the sides in and roll tightly from one end to the other. Slice in half diagonally if desired.
- Serve immediately or warm the wrap in a dry skillet for 1-2 minutes per side for a toasted finish.

To avoid soggy wraps, keep lettuce and dressing separate until just before assembling and do not overdress the lettuce. For a warm, toasted wrap, heat in a dry skillet for 1-2 minutes per side after assembling. Chicken thighs can be used instead of breasts with adjusted grilling time. For dairy-free options, use vegan Caesar dressing and omit Parmesan or substitute with nutritional yeast.
