Description
A fast and easy single-serving breakfast sandwich made in a mug with eggs, cheese, and bread, perfect for rushed mornings.
Ingredients
- 1 large egg (room temperature)
- 2 tablespoons shredded cheddar cheese
- 1 tablespoon milk (whole or 2%, or dairy-free alternative)
- 1/2 English muffin or 1 slice sandwich bread, toasted and torn into bite-sized pieces
- 1 teaspoon butter (softened, optional)
- Salt and pepper to taste
- Optional: pinch of garlic powder or smoked paprika, chopped green onions
Instructions
- Lightly butter the inside of a 12-ounce microwave-safe mug.
- Toast half an English muffin or one slice of sandwich bread until lightly golden, then tear into small pieces and set aside.
- Crack the egg into the mug and add 1 tablespoon of milk. Beat vigorously with a fork or small whisk until combined and slightly frothy. Season with salt and pepper.
- Gently stir in the toasted bread pieces to coat them without making them soggy.
- Microwave on high for 45 seconds. Check the egg; it should be setting around the edges but still soft on top.
- Sprinkle shredded cheddar cheese evenly over the partially cooked egg.
- Microwave for another 30 to 45 seconds until the egg is fully set and the cheese is melted. Add 10-second bursts if needed to avoid overcooking.
- Let the mug sit for 30 seconds to finish cooking from residual heat. Loosen edges with a butter knife or fork if needed, then serve.
Notes
Use a larger mug to prevent overflow. Stir midway if desired, but layering cheese halfway through cooking yields better melt. Start with shorter microwave times and add increments to avoid rubbery eggs. Let the sandwich rest briefly after microwaving for best texture. Optional add-ins include veggies or cooked meats. For gluten-free, use gluten-free bread or omit bread and wrap egg and cheese in cooked bacon.
