Description
A refreshing, sparkling cocktail featuring homemade lemonade, fresh raspberry puree, and chilled Prosecco. Perfect for summer parties, brunches, or any festive gathering—easy to make, crowd-pleasing, and customizable for all tastes.
Ingredients
- 4 large lemons, freshly squeezed (about 1 cup juice)
- 1/2 cup granulated sugar (or honey, to taste)
- 2 cups cold water
- 1 cup fresh raspberries (plus extra for garnish)
- 2 tablespoons sugar (or agave syrup)
- 1 bottle (750 ml) chilled Prosecco
- Ice cubes, as needed
- Fresh mint leaves (for garnish)
- Optional: Lemon slices or twists for garnish
Instructions
- Juice lemons until you have about 1 cup of fresh juice. Strain out seeds and pulp.
- In a large pitcher, combine lemon juice and 1/2 cup sugar. Stir until dissolved.
- Add 2 cups cold water, stir, and chill in the fridge.
- Place 1 cup raspberries and 2 tablespoons sugar in a blender or food processor. Blend until smooth.
- Strain raspberry puree through a fine mesh strainer to remove seeds.
- Add strained raspberry puree to the lemonade base. Stir gently to combine and chill.
- Fill glasses with ice. Pour raspberry lemonade mixture halfway up each glass.
- Top with chilled Prosecco (about 1/2 cup per serving). Stir gently.
- Garnish with whole raspberries, mint leaves, and lemon slices or twists. Serve immediately.
Notes
Chill all ingredients and glasses for maximum fizz. For a non-alcoholic version, substitute Prosecco with sparkling water or ginger beer. Adjust sweetness to taste and use large ice cubes to prevent dilution. Prep lemonade and raspberry puree ahead for easy party assembly.
