Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, sift together flour, cocoa powder, baking powder, and salt. Set aside.
  3. In a large bowl, beat butter and sugar with a hand mixer until pale and fluffy (2-3 minutes).
  4. Beat in eggs one at a time, then add buttermilk, vanilla extract, white vinegar, and red gel food coloring. Mix until well combined.
  5. Gradually add dry ingredients to wet mixture, mixing on low speed until just combined.
  6. Fold in white chocolate chips with a spatula. Dough will be soft and slightly sticky.
  7. Optional: Chill dough in the fridge for 30 minutes for thicker cookies.
  8. Scoop tablespoon-sized portions of dough, roll into balls, and coat generously in powdered sugar.
  9. Place balls 2 inches apart on baking sheets. Bake for 10-12 minutes until edges are set and tops are crackled but centers are still soft.
  10. Let cookies rest on baking sheet for 2 minutes, then transfer to a wire rack to cool completely.

Notes
