Ingredients
- 6 medium fresh lemons (about 1 cup or 240 ml lemon juice)
- 1 cup (200 grams) granulated sugar
- 2 tablespoons dried culinary lavender
- 4 cups (960 ml) water, divided
- Ice cubes, for serving
- Optional: fresh lavender sprigs or lemon slices for garnish
Instructions
- Make the Lavender Simple Syrup (10-12 minutes): In a medium saucepan, combine 1 cup (240 ml) water and 1 cup (200 g) granulated sugar. Bring to a gentle boil over medium heat, stirring occasionally until the sugar dissolves. Remove from heat and stir in 2 tablespoons dried culinary lavender. Cover and let steep for 10 minutes.
- Strain the Syrup: After steeping, strain the syrup through a fine mesh strainer into a heatproof bowl or pitcher to remove lavender buds. Press gently on the lavender to extract flavor but avoid pushing through bits that could cloud the syrup.
- Juice the Lemons (5 minutes): While the syrup is steeping, roll the lemons on the counter to soften, then juice until you have about 1 cup (240 ml) of fresh lemon juice. Strain out seeds and pulp for a smooth finish.
- Combine Lemon Juice and Syrup: Pour the lemon juice into the pitcher with the lavender syrup. Add 3 cups (720 ml) of cold water and stir well. Taste and adjust dilution if needed—add more water for milder lemonade or a bit more lemon juice for extra tang.
- Chill and Serve: Refrigerate the lemonade for at least 1 hour to allow flavors to meld and the drink to chill thoroughly. Serve over ice cubes, garnished with fresh lavender sprigs or lemon slices if desired.

Use culinary-grade lavender to avoid bitterness or soapy taste. Do not over-steep lavender to prevent bitterness. Strain syrup well for smooth texture. Chill lemonade for at least 1 hour before serving for best flavor. Substitute sugar with honey, agave, or sugar alternatives for different sweetness profiles. Fresh lavender can be used at half the amount of dried lavender.
