Instructions

  1. Make the Lavender Simple Syrup (10-12 minutes): In a medium saucepan, combine 1 cup (240 ml) water and 1 cup (200 g) granulated sugar. Bring to a gentle boil over medium heat, stirring occasionally until the sugar dissolves. Remove from heat and stir in 2 tablespoons dried culinary lavender. Cover and let steep for 10 minutes.
  2. Strain the Syrup: After steeping, strain the syrup through a fine mesh strainer into a heatproof bowl or pitcher to remove lavender buds. Press gently on the lavender to extract flavor but avoid pushing through bits that could cloud the syrup.
  3. Juice the Lemons (5 minutes): While the syrup is steeping, roll the lemons on the counter to soften, then juice until you have about 1 cup (240 ml) of fresh lemon juice. Strain out seeds and pulp for a smooth finish.
  4. Combine Lemon Juice and Syrup: Pour the lemon juice into the pitcher with the lavender syrup. Add 3 cups (720 ml) of cold water and stir well. Taste and adjust dilution if needed—add more water for milder lemonade or a bit more lemon juice for extra tang.
