A quick and easy sparkling watermelon slushie with fresh mint and lime, perfect for hot days and outdoor gatherings. This icy, bubbly drink balances sweet watermelon with tangy lime and refreshing mint.
Ingredients
- 4 cups (600 grams) seedless watermelon, cubed and chilled
- 1 cup (240 ml) sparkling water, chilled (plain or lemon-lime)
- 10–12 fresh mint leaves, washed
- Juice of 1 large lime (about 2 tablespoons or 30 ml), freshly squeezed
- 1 teaspoon lime zest (optional but recommended)
- 1–2 tablespoons (15–30 grams) sugar or honey (optional)
- 1 cup (about 150 grams) ice cubes
Instructions
- Cut seedless watermelon into roughly 1-inch cubes and chill in the fridge for at least 30 minutes.
- Gently muddle 10–12 fresh mint leaves in serving glasses or a small bowl to release oils without tearing the leaves.
- In a blender, combine chilled watermelon cubes, sparkling water, fresh lime juice, lime zest, ice cubes, and sugar or honey if using.
- Blend on high speed for 30-45 seconds until smooth and slushy. Add more ice cubes and pulse if texture is too thin.
- Taste and adjust by adding more lime juice or extra muddled mint leaves if desired.
- Pour the slushie into glasses over the muddled mint, stir gently to combine flavors, and garnish with a mint sprig and lime wheel.
- Serve immediately to enjoy the icy chill and sparkle. Store leftovers in the fridge but consume within 24 hours as fizz fades quickly.

To keep the sparkling water fizzy, blend watermelon, lime juice, and ice first, then gently stir in sparkling water at the end. Avoid over-muddling mint to prevent bitterness. Chill watermelon and sparkling water beforehand for best icy texture. Adjust sweetness based on watermelon ripeness. Variations include swapping mint for basil or cilantro, adding berries or cucumber, or adding alcohol for a cocktail version.
