Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar using a hand or stand mixer until fluffy, about 2-3 minutes.
- Add the honey, egg, and vanilla extract to the bowl. Mix until fully combined, scraping down the sides of the bowl as needed.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing—it can make the cookies tough.
- Using a cookie scoop or spoon, drop dough balls onto the prepared baking sheets, spaced about 2 inches apart.
- Sprinkle each cookie dough ball with a pinch of flaky sea salt.
- Bake for 10-12 minutes, or until the edges are golden and the centers look slightly underdone.
