Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar using a hand or stand mixer until fluffy, about 2-3 minutes.
  3. Add the honey, egg, and vanilla extract to the bowl. Mix until fully combined, scraping down the sides of the bowl as needed.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing—it can make the cookies tough.
