Ingredients
Scale
- 1 lb (450 g) ground beef (80/20 blend recommended)
- Salt and pepper to taste
- 1 tablespoon (15 ml) vegetable oil or canola oil
- 4 large flour tortillas
- 4 slices American cheese
- 1 cup (50 g) shredded iceberg lettuce
- ¼ cup (40 g) diced white onions
- ¼ cup (40 g) dill pickle slices
- Secret Sauce:
- ½ cup (120 ml) mayonnaise
- 2 tablespoons (30 ml) sweet pickle relish
- 1 teaspoon (5 ml) Dijon mustard
- 1 teaspoon (5 ml) white vinegar
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon smoked paprika
- Salt and pepper to taste
Instructions
- Make the Secret Sauce: In a small bowl, combine mayonnaise, sweet pickle relish, Dijon mustard, white vinegar, garlic powder, onion powder, smoked paprika, and salt and pepper. Mix well, cover, and refrigerate to let flavors meld.
- Prep the Toppings: Dice white onions, slice dill pickles, and shred iceberg lettuce. Set aside.
- Form the Beef Balls: Divide ground beef into 4 equal portions and loosely roll into balls without packing tightly.
- Heat the Skillet: Place a cast iron skillet or heavy-bottomed frying pan over medium-high heat and add vegetable oil. Heat until hot but not smoking.
- Smash and Cook the Patties: Place each beef ball in the skillet and immediately press down with a spatula to form thin patties about ¼ inch thick. Hold pressure for 15 seconds. Cook 2-3 minutes until edges are crispy and brown. Flip, add a slice of American cheese, and cook another 1-2 minutes until cheese melts and patty is cooked through.
- Warm the Tortillas: While patties cook, warm tortillas individually in a dry pan or microwave for 10-15 seconds to make pliable.
- Assemble the Wraps: Spread about 2 tablespoons of secret sauce on each tortilla. Add a smashed burger patty, then top with shredded lettuce, diced onions, and pickle slices. Fold sides in and roll tightly.
- Serve Immediately: Enjoy the wraps fresh while patties are hot and cheese is melty.
Notes
Use 80/20 ground beef for juicy patties. Don’t overwork the meat when forming balls. Smash patties immediately in a hot skillet for crispy edges. Warm tortillas before assembling to prevent cracking. Assemble wraps just before serving to avoid sogginess. Secret sauce tastes better after resting in fridge for a few hours or overnight.
