  • 4 boneless, skinless chicken breasts (about 6 oz / 170 g each)
  • 1 (5.2 oz / 150 g) package of Garlic & Herb Boursin cheese
  • 8 slices of thin-cut bacon
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon fresh parsley, finely chopped (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lay each chicken breast flat on a cutting board. Using a sharp knife, carefully cut a horizontal pocket into the thickest side of each breast, making sure not to cut all the way through.
  3. Place the chicken breasts between two sheets of plastic wrap or in a zip-top bag. Gently pound with a meat mallet or rolling pin until about 1/2 inch (1.3 cm) thick.
  4. Sprinkle both sides of each breast with garlic powder, onion powder, salt, and pepper.
  5. Using a spoon, fill each pocket with about 2 tablespoons (30 g) of Boursin cheese.
  6. Take two slices of bacon per chicken breast and wrap them snugly around the stuffed chicken, covering as much surface as possible. Secure with toothpicks if needed.
  7. Heat olive oil in an oven-safe skillet over medium heat. Place the bacon-wrapped chicken seam side down first. Cook for 3-4 minutes per side until the bacon starts crisping and the chicken browns nicely.
  8. Transfer the skillet to the preheated oven (or place the chicken in a baking dish if not using an oven-safe skillet). Bake for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and bacon is crispy.
  9. Remove chicken from oven and let rest for 5 minutes. Sprinkle with fresh parsley before serving.

Notes

Do not overstuff the chicken pockets to prevent cheese leakage. Use thin-cut bacon for better crispiness. Use a meat thermometer to ensure chicken reaches 165°F (74°C). Let chicken rest after baking to redistribute juices. For extra crispiness, broil for 1-2 minutes at the end if needed.
