A quick and easy recipe featuring juicy chicken breasts stuffed with creamy garlic and herb Boursin cheese, wrapped in crispy bacon for a flavorful and impressive meal.

- 4 boneless, skinless chicken breasts (about 6 oz / 170 g each)
- 1 (5.2 oz / 150 g) package of Garlic & Herb Boursin cheese
- 8 slices of thin-cut bacon
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon fresh parsley, finely chopped (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Lay each chicken breast flat on a cutting board. Using a sharp knife, carefully cut a horizontal pocket into the thickest side of each breast, making sure not to cut all the way through.
- Place the chicken breasts between two sheets of plastic wrap or in a zip-top bag. Gently pound with a meat mallet or rolling pin until about 1/2 inch (1.3 cm) thick.
- Sprinkle both sides of each breast with garlic powder, onion powder, salt, and pepper.
- Using a spoon, fill each pocket with about 2 tablespoons (30 g) of Boursin cheese.
- Take two slices of bacon per chicken breast and wrap them snugly around the stuffed chicken, covering as much surface as possible. Secure with toothpicks if needed.
- Heat olive oil in an oven-safe skillet over medium heat. Place the bacon-wrapped chicken seam side down first. Cook for 3-4 minutes per side until the bacon starts crisping and the chicken browns nicely.
- Transfer the skillet to the preheated oven (or place the chicken in a baking dish if not using an oven-safe skillet). Bake for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and bacon is crispy.
- Remove chicken from oven and let rest for 5 minutes. Sprinkle with fresh parsley before serving.
Notes
Do not overstuff the chicken pockets to prevent cheese leakage. Use thin-cut bacon for better crispiness. Use a meat thermometer to ensure chicken reaches 165°F (74°C). Let chicken rest after baking to redistribute juices. For extra crispiness, broil for 1-2 minutes at the end if needed.
