Instructions

  1. Pat beef chuck roast dry and season all sides generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering.
  3. Sear the roast on all sides until a deep brown crust forms, about 4-5 minutes per side.
  4. Slice the onion and mince the garlic; place them at the bottom of the slow cooker.
  5. Place the seared roast on top of the onions and garlic in the slow cooker.
  6. Pour in beef broth, Worcestershire sauce, dried thyme, dried rosemary, and add the bay leaf.
  7. Ensure the broth comes about halfway up the sides of the roast; add more broth or water if needed.
  8. Cover and cook on low for 6-8 hours or on high for 3-4 hours until beef is fork-tender.
  9. Remove beef to a cutting board and tent with foil; skim fat from cooking liquid if desired.
  10. Pour broth into a saucepan and simmer over medium heat for 10-15 minutes to concentrate flavors; season with salt and pepper to taste.
  11. Slice beef thinly against the grain.
  12. Butter and toast the French rolls until golden and crispy.
