Ingredients

  • 4 cups frozen French fries (thicker cut recommended)
  • 8 slices bacon, chopped
  • 1 cup barbecue sauce (240 ml)
  • 1 cup shredded sharp cheddar cheese (100 g)
  • 1 cup shredded Monterey Jack cheese (100 g)
  • 2 green onions, thinly sliced
  • Salt and pepper to taste
  • Optional: sliced jalapeños for a spicy kick

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cook the chopped bacon in a skillet over medium heat until crispy, about 8-10 minutes. Remove with a slotted spoon and drain on paper towels, leaving some bacon fat in the pan.
  3. In a large bowl, toss the frozen fries with half of the barbecue sauce until lightly coated.
  4. Spread half of the sauced fries into a 9×13 inch baking dish.
  5. Sprinkle half of the cooked bacon evenly over the fries.
  6. Add a layer of half the shredded cheddar and Monterey Jack cheese over the bacon.
  7. Repeat the layers with the remaining fries, bacon, and cheese, then drizzle the remaining barbecue sauce on top.
  8. Bake the casserole for 20-25 minutes until the cheese is melted, bubbly, and the fries have golden crispy edges.
  9. Remove from oven and garnish with sliced green onions and optional jalapeños before serving.

Notes

Use thicker cut fries for better texture. Toss fries with BBQ sauce in two parts to avoid sogginess. Crisp bacon well for smoky crunch. Rotate casserole halfway through baking if browning unevenly.
