  • 1 ½ cups (300 g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • Cinnamon Sugar Coating:
  • ⅓ cup (67 g) granulated sugar
  • 2 tablespoons ground cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together all-purpose flour, baking soda, cream of tartar, and salt. Set aside.
  3. In a large bowl, use an electric mixer on medium speed to beat softened unsalted butter with granulated sugar until light and fluffy, about 3 minutes.
  4. Beat in the large room-temperature egg and vanilla extract until combined.
  5. Gradually add dry ingredients to the wet, mixing on low speed or folding with a spatula just until incorporated. Do not overmix.
  6. In a small bowl, mix granulated sugar and ground cinnamon for the coating.
  7. Scoop about 1 ½ tablespoons (approximately 25 g) of dough for each cookie and roll each ball generously in the cinnamon sugar mixture.
  8. Place the coated dough balls on a tray and chill in the fridge for 15 minutes.
  9. Arrange the dough balls 2 inches apart on the prepared baking sheets and bake for 8-10 minutes or until edges are set but centers remain soft.
  10. Let cookies cool on the baking sheet for 5 minutes before transferring to a cooling rack to finish cooling.
