  • 1 bottle (750 ml) dry champagne or sparkling wine
  • 2 tablespoons brandy
  • 2 tablespoons honey
  • A small handful fresh mint leaves, chopped
  • Zest of 1 lemon
  • Optional: splash of orange liqueur (e.g., Grand Marnier)

Instructions

  1. Wash all the fruit thoroughly. Hull and halve the strawberries, slice the kiwi, peel and segment the orange, halve the grapes, and rinse the blueberries. Place all the prepped fruit into a large mixing bowl. Handle gently to avoid bruising.
  2. Drizzle the honey evenly over the fruit. Zest the lemon directly over the bowl to catch all the oils. Toss gently to coat the fruit with honey and zest.
  3. Pour in the brandy and slowly add the dry champagne or sparkling wine. Stir gently to combine, careful not to break the fruit or lose the bubbles. Add the champagne last to keep the fizz fresh.
  4. Sprinkle the chopped mint leaves over the salad and fold lightly to incorporate.
  5. Cover the bowl with plastic wrap and refrigerate for at least 15 minutes to let the flavors meld and the bubbles infuse the fruit. Serve chilled, scooping with a slotted spoon.
