  • 2 tablespoons unsalted butter, softened
  • 3 tablespoons all-purpose flour (or gluten-free flour)
  • 2 cups chicken broth (low-sodium recommended)
  • 1/2 cup full-fat sour cream (or Greek yogurt for lighter version)
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Pat the pork chops dry with paper towels. Season both sides generously with salt, pepper, garlic powder, onion powder, and paprika.
  2. Optional but recommended: Heat a skillet over medium-high heat with a little oil or butter. Brown the pork chops for 2-3 minutes per side until golden to add flavor and seal in juices.
  3. In a mixing bowl, combine softened butter and flour into a smooth paste. Gradually whisk in chicken broth until lump-free.
  4. Place browned pork chops in the slow cooker. Pour the gravy mixture evenly over the pork chops.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours until pork is fork-tender and juicy. Check at 3 hours if cooking on high to avoid overcooking.
  6. About 30 minutes before serving, stir sour cream into the crockpot gently to combine and make the gravy creamy.
  7. Taste and adjust seasoning if needed. Sprinkle fresh parsley on top before serving.

Notes

Browning the pork chops before slow cooking adds extra flavor and helps seal in juices. Add sour cream at the end to prevent curdling. If gravy is too thin, make a slurry with flour and cold water and cook uncovered for 10-15 minutes to thicken. Avoid lifting the lid during cooking to maintain temperature and tenderness.
