  • 1 medium yellow onion, finely diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon sea salt (more to taste)
  • 1/4 teaspoon freshly ground black pepper
  • 1/3 cup tomato sauce or salsa
  • 1 large head Romaine lettuce (or butter lettuce; leaves separated, washed, and dried)
  • Cherry tomatoes, sliced (optional)
  • Shredded cheese (cheddar, Monterey Jack, or dairy-free) (optional)
  • Avocado or guacamole (optional)
  • Fresh cilantro, chopped (optional)
  • Thinly sliced jalapeños (optional)
  • Lime wedges (optional)
  • Greek yogurt or sour cream (or coconut yogurt for dairy-free) (optional)

Instructions

  1. Separate the Romaine leaves, wash gently, and dry thoroughly. Set aside.
  2. Dice the onion and bell pepper. Mince the garlic. Prep toppings as desired.
  3. Heat a large skillet over medium-high heat. Add ground turkey, breaking it up with a wooden spoon. Cook until no longer pink, about 5-7 minutes.
  4. Add chopped onion, bell pepper, and garlic to the pan. Stir and cook until veggies are soft and fragrant, about 3-4 minutes.
  5. Sprinkle in chili powder, cumin, smoked paprika, salt, and pepper. Stir to coat evenly. Pour in tomato sauce or salsa and simmer for 4-5 minutes until thickened.
  6. Taste and adjust seasoning as needed. Add lime juice if desired.
  7. Lay out lettuce leaves on a serving platter. Spoon 2-3 tablespoons of turkey filling onto each leaf.
  8. Add desired toppings: cheese, tomatoes, avocado, cilantro, jalapeños, lime, and yogurt or sour cream.
  9. Serve immediately while lettuce is crisp and filling is hot. If prepping ahead, keep filling and lettuce separate until serving.

Notes

Dry lettuce thoroughly for sturdy wraps. Adjust seasoning to taste. Double up lettuce leaves if needed for extra support. Filling can be made ahead and reheated. Easily adaptable for vegetarian, keto, or dairy-free diets.
