  • 1/4 cup Parmesan cheese, grated (optional)

Instructions

  1. Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to preheat as well.
  2. Roll out your pizza dough on a lightly floured surface until it’s about 12 inches in diameter. Transfer it onto a piece of parchment paper.
  3. In a mixing bowl, combine the ricotta cheese and minced garlic. Mix until smooth and creamy.
  4. Spread the ricotta mixture evenly over the pizza dough, leaving about 1 inch around the edges for the crust.
  5. Arrange the thin lemon slices over the ricotta layer. Be sure to remove any seeds from the lemons.
  6. Drizzle the olive oil over the top and sprinkle with salt, pepper, and fresh thyme (if using). Add grated Parmesan cheese if desired.
